Punch Bowl Cake

In today's Friday Recipes (well okay almost Friday) we're having Punch Bowl Cake. Oh, yum!
Doesn't it look delicious?

This cake is so much fun to make and easy too. Just layer it, layer upon layer.

Layer upon layer. As I made this cake, I began to think, “Now isn’t this just how God reworks us.” He begins with little and slowly, layer upon layer; He creates in us a vessel fit for His use. Perhaps like me, you aren’t so proud of some of your layers-those past mistakes that seem wont to haunt our memories-but guess what? God does not remember those mistakes, those sins. If you’ve asked for God’s forgiveness then He has granted you full and free forgiveness. God is so good to us. He loves us beyond what we deserve. But that’s God's marvelous grace.

Just me thinking as I put this cake together, today. Layer upon layer, God has rebuilt my life and made me a vessel fit for His use. In fact, He’s still building me up. And His love is the icing that keeps my ‘layers’ together!

So, back to the cake making.

Begin by layering yellow cake mix, or the cake of your choice in the bottom of a punch bowl. (any large bowl will do)

Add a layer of canned pie filling such as cherry pie filling.

In the third layer add walnuts and coconut then pour French vanilla pudding, mixed according to package directions, over the first few layers.

Fourth layer: More pie filling.

Fifth layer: More cake crumbled up and spread over the fourth layer then coconut and Walnuts over that.

Sixth layer: Add more French vanilla pudding to moisten the cake and add flavor.

The top and final layer is Cool Whip spread atop all.

You really cannot make this cake wrong. Use a combination of whatever fruits, nuts, and cake you wish to layer the cake. This cake is fun to make. Be creative.

Once the cake is completed, store in refrigerator. The cake tastes much better after it chills for a time.

Ripping out Subfloors. Photos

Hardwood Floor Refinishing Photos (Farmhouse Remodel)

As par the course, I've had to stop remodeling work while I heal from my kidney issue-stones and surgical procedure. Just a small procedure nothing serious. Still, there's down time. I haven't gotten anything else done at the farmhouse other than cleaning. I think partly because of the cold and partly because with the kidney stones I just didn't feel well enough to do the remodeling work. Can't wait to complete it though.

As of now, the subflooring is out of the kitchen and dining room. Yeah! All thanks to my dear hubby, who worked his tailfeathers off to rip out the subfloors. The kitchen was a horrible mess. Here are some before photos of the kitchen and dining room floors.

Once my kidney recovers, I'll get up and at those floors. wood is red oak, so you can imagine how pretty it will turn out once I refinish them. I'll add the 'after' photos as soon as I complete the floors.

The kitchen is probably the worst room-running a close second to the bathroom. Although, structurally sound, it requires a great deal of cleaning and redecorating. But I love to decorate, so who am I to complain. It's exciting to clear the house out and have an empty pallet as a starting point.

The subfloor had nails at 1 inch intervals. My husband could scarcely believe that insanity. Sigh. He did a find job of removing the subfloor without damaging the hardwood. And if he did, that only adds to the appeal, in my humble opinion, as I prefer 300 year old cottages to spanking new homes. I'm happy with our old house. Love it!

This is a close up of the dining room floor. It needs work, but looks good considering my husband ripped subflooring off of it.

Unfinished Red Oak Floors in Parlor

I spent an entire day cleaning floors in preparation for sanding and refinishing them. Well, sanding is part of refinishing them, ha ha. I just want to show you all how pretty the wood is, unfinished. Won't it look good once we finish it? Thank you, Lord for strengthening me to do this remodel. I know, I'm silly. But that's okay.

Here's a close up photo of the red oak floors. There are a lot a scratches, to be sure. They'll sand out nicely.

Is Your Blog Giveaway Legal?

What are the regulations concerning blogger giveaways?

Last week I planned to host a giveaway both at 80 Acres and a Book and at my author's blog, Sand & Pearls II. (I know I'm shamelessly plugging my Sand & Pearls blog. : -). Before hosting the giveaway, I researched the regulations concerning blogger giveaways and learned some interesting facts. I’ve also decided to opt out of giveaways, sweepstakes, and contests for the time being, at least. But if you happen to be in my neighborhood, I’ll gladly give you one of my book review books. Just ask.

The FTC, one of the governmental bodies that regulates Contests and Sweepstakes, the others being the Postal Service and the Department of Justice, expects bloggers to comply with federal agencies and follow federal and state laws governing their blog contests, giveaways and sweepstakes. Make no mistake about it, the FTC is watching bloggers. Many bloggers inadvertently promote their blogs against FTC regulations by throwing up ‘giveaways’ that require entrants to ‘follow’ them here-or-there or ‘like’ this-or-that site. I thought of doing this, but it felt wrong to me. So I’m not.

Did you know that. . .

Sweepstakes are prize giveaways where the winners are randomly chosen.

Contests choose a winner based on some merit; best tips, or comments, best recipe, best photo, etc.

Lotteries are prize drawings where people pay money to buy a chance to win. Lotteries are highly regulated and should not be run without consulting legal counsel.

Taking the definition of a sweepstake into account, we see that most blogger ‘giveaways’ fall under the sweepstakes category yet the blogger hosts it as a giveaway. What would Mr. FTC say to you if he dropped by your blog and discovered that your ‘giveaway’ is actually a sweepstakes? I see him now wearing those dark sunglasses and carrying his clipboard. “Hum,” he says in a CIA-monotone that sounds more like fingernails on a chalkboard. “You’re not in compliance with our regulations.” Oh, dear!

Random Facts about Blogger Law

You must report prizes over $600 to the IRS (Internal Revenue Service)
Bloggers must pay taxes on everything they receive with a value of over $25

A lottery’s 3 key elements are: Prize, Chance and Consideration. With this in mind, could requiring someone to like or follow you in order to enter you ‘giveaway’ be interpreted as consideration?
You must not use Facebook features or functionality, such as the Like button, as a voting mechanism for a promotion. (New Term #5) This is found under Facebook’s promotions guidelines.

I hope this post has offered some insight into hosting ‘giveaways’ at blogs. After all, we want the giveaways we host to be an entirely legal event.

Trojan Virus Attack/Blogging Again

Well, after the Trojan virus attacked my computer, I was pretty much offline for nearly 3 weeks while dealing with computer issues.

I'm back and beginning to blog some. Once a week, I hope.

Update on our farmhouse remodel. A friend of my husband updated the electrical to 200 amp, so yeah! We won't trip anymore breakers. That's nice.

This weekend my hubby and a nice fellow from church will work on the kitchen floor. They are going to attempt to remove subflooring that was hammered into the beautiful (over 100 years old) red oak hardwood floors. The very thought of those lovely oak floors damaged hurts my heart! I'll add photos of that adventure next week.

The Thank You Challenge/Praise Journal

Do you ever feel like not praising God?

Don't feel bad about that. You're not alone. All of us go through times when we simply don't feel like praising God. The challenge during such times is to praise God regardless of the circumstances that bring us down both emotionally and physically. God does not change. he is forever good. We should be forever grateful to Him.

Lately, I’ve not felt very thankful about much. I’m certain my negative attitude is due to grief as my father-in-law died only last month. During the past weeks, I’ve tried to remain positive, but when grief overwhelms one’s good senses, negativity wants to grip the heart in a stronghold. This morning I woke and said, “Enough!” No more looking at the world through the eyes of grief. Yes, I’m still extremely sad, but God is good and life goes on.

I was surfing the internet this morning, looking for something quite different and discovered this author, Inspirational speaker and author Connie Ruth Christiansen. Her book, Thank You 1095, challenges you to write down 3 things/or reasons you are thankful for each day. At the end of one year you reread all that you are thankful for, and all means 1095 things. I thought, “What a great idea!” If you’re having difficulty showing your thankfulness to God, for whatever reason, and you have the extra cash to drop on this book, why not try it?

I know, I know, you’re thinking, why write down my praise? Goodness, why not? We have the Bible as inspiration. Did not David write out his praise to God? At the end of the year, you’ll have a daily journal of praise to God. Now that is an inspiration in itself. Reading how you praised God throughout the year will not only encourage your heart, but it will help build your faith in God. We grow in faith precept upon precept and keeping spiritual-growth journals as well as praise journals create wonderful tools for our faith walk.

If you don’t have the money to purchase the book right now, there’s no reason not to begin showing your thankfulness to God on paper. Use an inexpensive notebook and create a daily, “Thankful Journal”. When you have enough money, order Thank You 1095 and complete the year of thank yous with Connie’s book. Don’t forget to read God’s Word daily, as well.

I like the message in this book. Although, I was disconcerted to see it end so abruptly. I also prefer a story to focus on one character.

But overall, the book was good enough. It’s an enjoyable weekend read that makes you feel as if you should search your heart, even if it doesn’t keep you up all night reading.

Civility Rules: What is Christian Etiquette?

In this world of hustle and bustle, it seems people have lost their basic civility toward one another. Alright, not everyone, but quite a few seem to have forgotten to "Be nice!" as our mothers hopefully taught us to be. And sadly, many of those who've lost their civility are Christians. So, in this column, I'm going to put forth suggested ways of civility. Even on our worst days, is it too difficult to simply show our fellow man a bit of kindness? After all, a soft answer turns away wrath, as Proverbs 15:1 tells us.

I do not suggest that there aren't situations wherein we must assert ourselves, but there are times that keeping our mouth shut is the best rule. If we ask for wisdom God grants it to us so that we'll know in which situations to assert ourselves and in which matters we need to just be quiet, as proper Christian etiquette suggests we should. Again, I repeat God's word, "a soft answer turns away wrath."

What do I deem as Christian etiquette?

If according to Merriam Webster's dictionary etiquette is, "

: the conduct or procedure required by good breeding or prescribed by authority to be observed in social or official life", then Christian etiquette merely folds into basic etiquette the love of Christ. Proper etiquette blended with the love of Christ really is the ultimate way to preach the Gospel, for we do so with every step of our way! We are, in effect, living the Gospel of Jesus Christ before all men.

Why not recall with me the ways of kindness and proper etiquette, and in living a life of good Christian etiquette we share the love of Christ with our fellow man.

Practice civility every day!

One way to be kind to others is not to jump to conclusions when someone appears rude. Perhaps the person is merely distracted, tired, sick, or in pain from chronic ailments. Their distraction may come across as rudeness. When we jump to conclusions and assume a person is treating us unkindly many times we fuel an unnecessary fire with our lack of civil behavior.

Instead, respond with kindness, understanding and mercy. Glance at the person's eyes. Perhaps you'll see the sadness and the longing for something more in their life. Perhaps their assumed rudeness is actually a cry for help. Show them the love of Christ. Give them Jesus, not a sharp-tongued retort and an unmerciful heart. Did not Christ show us mercy and grace? Humm, perhaps we, and I speak to myself! Perhaps we should remember to reciprocate with the same love Christ shows us. Now, I'm off to be tried on my words!

Sweet and Salty Pecan Pie

I love the taste of sweet and salty nut bars. So this Thanksgiving, I altered my pecan pie recipe to suit my taste. Goodness, was it ever good. This is my recipe for Sweet and Salty Pecan Pie. Please alter it to suit your own tastes and enjoy it.

Sweet and Salty Pecan Pie

If you’re like me and you enjoy the taste of sweet and salty deserts, then this pie is for you! I created it because I love the sweet and salty granola-type bars. Alter this recipe to suit yourself and enjoy. We certainly did, on Thanksgiving Day.

Ingredients

· 3/4 cup sugar (granulated)

· 1 1/2 cups corn syrup (I mixed mine by adding 1 cup dark and ½ cup light.)

· 4 eggs, slightly beaten

· 1/4 cup butter or margarine, softened but not melted

· 1 1/2 teaspoons vanilla

· 1 1/2 cups whole pecans

· Kosher salt

· 1 unbaked deep dish pie shell

Directions

Boil sugar and corn syrup together until the sugar dissolves well-2 to 3 minutes will do. Afterward, set aside the sugar-syrup mixture to cool slightly. Lightly beat the eggs in a large bowl (Hint: use a heat proof bowl) then pour the syrup mixture into the eggs. Stir constantly to prevent lumping. If lumps appear stir and break them up. Remove or strain stubborn lumps from mixture. Stir in butter or margarine, vanilla, pecans, and a dash of Kosher salt. Pour into unbaked pie shell and bake on center rake in a 350° oven for 40 to 60 minutes. When the top of the pie is no longer runny sprinkle Kosher salt to taste over the entire top. Continue cooking. The pie will set somewhat firm but not overmuch otherwise the pecans will be too hard to eat.

Serve with vanilla ice-cream or cool whip.

Angels Rejoice Tonight!

There is nothing more disquieting than the fear that a loved one may not enter heaven upon their death.

I have a family member who rejected the Gospel of Jesus Christ for some time. I felt a desperate need for this family member to receive the Lord as his savior. But with one year piling upon another, I came close to giving up the 'fight' to see him saved. Last year he was diagnosed with terminal cancer. His health declined and grew steadily worse. And my need to see him accept Jesus Christ and therein the assurance of eternity with God, increased significantly.

You see, there is a heaven and there is a hell. Upon death we enter one or the other. Reject Jesus Christ, who is the true Messiah and the son of God, and you’ll see hell. Romans 10:9-10 from the Holy Word of God-the Bible-tells us this. “⁹ If you confess with your mouth that Jesus is Lord and believe in your heart that God raised him from the dead, you will be saved. ¹⁰ For it is by believing in your heart that you are made right with God, and it is by confessing with your mouth that you are saved.” And we find in Acts 4:12 that, “Salvation is found in no one else, for there is no other name under heaven given to mankind by which we must be saved.”

God grants us all free will, so choose what you wish. You may believe what the Word of God says or not, but do you really want to take the chance of going to hell by rejecting Jesus Christ if at the end you realize that the Bible is true, that God is real, that Jesus Christ as actually the risen son of God and the only way to heaven? Read John 14:6 “Jesus answered, “I am the way and the truth and the life. No one comes to the Father except through me.” What do you have to lose by simply praying and asking God to reveal the truth to you? Try it. “Call unto me, and I will answer thee, and show thee great and mighty things, which thou knowest not.” Jeremiah 33:3

But, I must finish the story!

After witnessing my beloved family member withering away from cancer during the past year and praying that he would come to know the Lord Jesus before he passes, I’m so very thankful to say that tonight he came to know the Lord. My fretful days are over! Thank you, God for your mercy and your grace, for your enduring love, for your son Jesus Christ who died upon the cross to grant full and free forgiveness -we cannot buy Jesus’ forgiveness with tithing or offerings. His forgiveness is full and free- to all who choose to follow Him. You see, and I’m paraphrasing, the angels rejoice over every soul who accepts Jesus Christ, “. . . joy shall be in heaven over one sinner that repenteth. . .” Luke 15:7 All this time, I felt as if my family member was hard set against hearing the Gospel, that he’d never accept the Lord, never go to heaven. But life has a way of wearing down the hard edges. God knows just how to make our hearts pliable.

So don’t give up praying for family and friends who seem to reject Jesus at every corner. You do not know their heart. Even if you’ve prayed for many years for their salvation, keep praying. Live a godly life before them, pray, preach the gospel as led by the Holy Spirit, meaning never try and force the gospel of Jesus Christ upon someone. Aggression is not the answer for unsaved loved ones. You cannot bully people into believing in the Lord. It’s a choice that each individual makes. In other words, be nice but steady in the Lord. The unsaved loved one will see your faithfulness to God and with prayer may very well come to accept Jesus.

Tonight my troubled heart found peace. Although it’s terribly difficult to watch my beloved family member suffer and to carry the sad burden of his eminent death, I now walk with the assurance that he is heaven bound when his time comes.

Our life upon earth is transitory. With death we face an eternity in heaven or hell. I’m so glad that my family member chooses to spend eternity with the Lord.

Perry introduces us to John J. Pershing, an American military leader who commanded the Expeditionary Force in World War I, leading his million-man army in France and defeating the German’s in a mere six months of action.

In this biography of John J. "Black Jack" Pershing, the author paints a portrait of Pershing, not only as the brilliant yet demanding and difficult-to-please military leader in action-“nothing imperfect escaped his notice or criticism”-but also chronicles Pershing’s role as a loving husband and father, an excellent dancer, and a true friend to those fortunate enough to know him well off the battlefield.

Perry states that the ‘real’ Pershing was a truly great man.

And after having read this book, I must agree with the author!

If you want to learn more about the First World War and General Pershing’s role in it, I recommend this book as Perry’s style of writing isn’t arduous. His work on Pershing is quite an enjoyable read, one in which I did not want to lie down until I completed it.

And considering Perry’s military career and place in American history, which includes time in New Mexico to the Battle of Wounded Knee, a tour in Cuba during the Spanish-American War, the hunt for Pauncho Villa in Mexico, and more before he made his way to France in World War I, I feel this book would add a fine element to middle school or high school level lessons in American history or Pershing’s role in World War I.

Shabby Chic Kitchen Photos

Finally! The Updated Photos.

Here's the updated photos of my Shabby Chic kitchen I promised to post. Please keep in mind that we still must add an exhaust fan and cabinets over the stove, some trim, grout the backsplashes, paint a bit, mount drawer handles and cabinet knobs, and complete some touchups here and there. My kitchen isn't perfect, but it's comfortable. I love my kitchen now that I rebuilt and tiled the countertops and added the island. Top left photo shows one of the countertops I rebuilt. It was fairly easy to figure out but physically taxing. Thank God, I had only 3 new countertops to build.

I'm currently looking, well rather passively so, for an antique dresser or something else antique-like to make over and use as an island. Right now, I'm using the base of my antique Hoosier cabinet for an island. It works great but I want to make an island with a thick butcher block top on it and an area to set stools at for a breakfast bar. I may need to make the breakfast bar by adding a 'stepped up' area of countertop onto the island. No problem. I'll just do it! Anyhow, we aren't doing a lot of remodel work right now. Just enjoying the completed areas.

We remodeled the mobile home as we've built a large addition onto the front and roofed over it all to create a cohesive look. A house. Simply framing in a section at a time to cover the mobile home exterior creates a solid exterior wall with roof overall, of course.

And in the end you have something like this!

Bookcase/see through into morning room which also allows heat from pellet stove to flow through these rooms with ease. The bookcase area was the original front door of the mobile home.

We (well, I actually) still need to purchase a stove exhaust fan and cabinets to mount above the stove. That will have to wait until next spring. So, I just threw together some shelves and mounted them above the stove to temporarily house a few necessary items, like olive oil. I think there's 3 bottles of olive oil on the top shelf. Can't have too much olive oil!

That's the end of the photos for now. I'll add photos of other areas of our little cottage-used-to-be-mobile-home soon. Thanks for taking time from your day to look. Comment or ask questions about our remodel if you like.

Beautiful Florida Spring

This is one of the photos I snapped during vacation time with my family in Florida last July. (2011) We enjoyed going home (I'm from Florida originally and now live far away from the sand and sun). We had so much fun the day we spent at this spring. It'd been so long since I laid around in the cool, clear water. What fun!

Little did we know we would have to rush home a few days later with a sick child who required surgery, a short hospital stay, and several weeks healing time. We never know what the future holds. So, as I look back over my Florida vacation photos, I remind myself to live life to its fullest, within the Will of God and never neglect to tell those I love just what they mean to me. Life is fleeting. It changes from moment-to-moment. I pray I never waste even one of the precious days God grants me.

How to Make a Household Planner

One way to keep organized is to create a Household Planner, also known as a Home Management Organizer or Notebook. These little (or large) books are convenient because everything you need to smoothly run your household is inside the Household Planner.

Whether it's a home project, paying bills, or a school event my family must attend, I depend on my Household Planner to keep me on schedule. In addition to my Household Planner, I made a Remodeling Project Planner, since we are knee deep in remodeling our house. My Remodeling Project Planner contains several projects, separated into "chapters". If you prefer, and it may be wiser to do so, separate projects into individual binders. File all related paperwork and information for each project into its allotted binder.

There's no limit to the number and type of planners you create. Put together one for your children's school projects or make a Garden Planner. Use your imagination and have fun doing it.

There’s a wealth of information and free printables for making household planners on the internet. Just Google it. Robin Parrish Creates a Unique Read!

Normally, I don’t read the type of stories Robin Parrish writes. But thinking I’d try something a bit different—I normally read Inspirational Regency Romance—I chose “Vigilante”.

I must admit, this book makes me wish Hollywood would make it into a film. I’d truly like to see this story play out on screen. And goodness! Which star would assume the role of the hero, Nolan Gray? Now there’s a thought-provoking question.

After suffering unimaginably in his past, the hero, Nolan Gray, determines to defend the defenseless in a world run amuck with evil. I see Nolan’s need to defend the helpless as an admirable quality. And for that quality alone, I liked Nolan Gray. But how can a mere mortal being defeat evil? Such a task would require superhuman strength and capabilities. In transforming himself into the Vigilante Nolan Gray does just that! But does he go too far? How can a man take on the superior nature of God?

Heavy with the dark reality of crime, in a story world filled with evil, this book is not a light read. But it is a good read. Will Nolan Gray overcome evil? Or is that a job for God alone? Read the book and learn for yourself what becomes of Nolan Gray and his faithful team of superhero creators.

In Vigilante, Robin Parrish weaves a good story with lots of action and finely-developed characters and an ending that will make you think anew about the story you've just read. I give Vigilante two thumbs up. Great job, Mr. Parrish!

Where Have You Been? I haven’t seen any new blog posts from you in a while.

Someone asked me that question recently. I simply shrugged and said, "After my daughter healed from having had surgery due to MRSA, I've been quite literally buried in house remodeling." I felt only somewhat chastised for not posting at my blogs for over two months. But only somewhat.

When I look around my house at the work I’ve completed I feel terribly thankful. And yes, I could have blogged and completed all the heavy remodeling work at once. I suppose. But I just didn’t. I’ve worked virtually from sunup to sundown on my house, completing the bathroom and majority of the kitchen. I was so weary and even discouraged from having to do the work alone, that by the evenings, I simply had no desire to write or blog. And yes, I realize my lack of desire to blog, came more from discouragement then actual physical exhaustion. Feeling discouraged during the push to complete the remodeling tasks created a sense of aloneness in me. That is never a place a person should live. Isolation breeds discontent. Perhaps I was too stubborn to ask friends for help. Perhaps, I simply felt an urgency to complete the project on my own. I cannot say. But the most difficult part of the work is over and I intend to use those feelings of discontent to fuel certain characters' personalities in future books. All is well that ends well! (The photo at the left shows one of the countertops I rebuilt and tiled.)

God strengthened not only my resolve but my physical body to carry out this remodel work. I gladly say, I’m done with the hard physical labor of remodeling our little cottage. Woo hoo!!! And yes, that’s me patting myself on the back and feeling quite thankful to God for granting me strength and ability to do this work. If only you could have been a fly on the wall, you’d understand just how difficult it was for me as I struggled through each task. Alone, with a neck injury, a hernia, and chronic pain due to Fibromyalgia, well it was hard for me, to say the least. And that's why I cannot help but act so silly about my achievements.
I still have to put up cove molding and baseboards in the kitchen and cove molding elsewhere, paint and touchup here and there. But compared to the hard work I’ve done in the past, these are small weekend projects. No more hard carpentry work for this chick! (Well, being a woman of a certain age, I’m more like an old, bedraggled hen on her last leg! Clu--clu--uuck. . . !)

I’m so excited that, now, I can get back to my life! I won’t promise tons of blog posts, but I’ll blog more often. So, I’m off to blog.
When you think you can't do a thing, just as I thought I'd never complete all those pesky remodeling tasks, remember, God grants strength for you to do what you must.

I can do all things through Christ which strengtheneth me.

Grilled Chicken Sandwiches

Steph’s Grilled Chicken Sandwiches

This recipe makes 4-6 sandwiches, depending on the size of chicken breasts and your appetite.

I use my cast-iron grill pan to cook the chicken in. The chicken cooks up tender and moist. It’s delicious!

Ingredients

2-4 uncooked chicken breasts, thawed.

*Meat tenderizer

Pepper, to taste

Dried Italian seasoning, to taste (You may substitute fresh Italian herbs, if available. Just cook them along with the chicken breasts.)

Extra virgin olive oil

4 large Italian sub buns. (The key is to have buns large enough to accommodate the grilled chicken, so pick your favorite large buns and enjoy!)

4 slices cheddar cheese (Use whatever cheese you prefer)

4-8 slices cooked bacon

Several sliced fresh tomato, sliced thin

Fresh large lettuce leaves

*Note: As the meat tenderizer has added salt, you’ll not need to salt the chicken.

Toast Buns

Turn oven to broil. Cut each bun open and place on baking sheet. Place in oven and toast to a lovely golden brown. The buns toast quickly, so keep an eye on them! Once toasted, remove from oven and set aside.

Cook Chicken

Begin by removing fat and grizzle from the chicken breasts. Then, using a meat mallet or other heavy object, tenderize the chicken breasts by pounding them. This is the fun part. Just beat out all the frustration of the day on those poor ole chicken breasts! Pound the breasts to ½ thick. Hint: For easy clean up, place the chicken in a 1 gallon Ziploc bag before pounding it.

Afterward, sprinkle the chicken, one side at a time, with tenderizer, pepper to taste, and dried Italian seasoning. Gently rub olive oil into each side of chicken breasts, using enough to coat each side. Be careful not to rub away the seasonings you added. Set aside.

Prepare cast-iron grill pan by adding just a dash of olive oil. (Only enough to kept the chicken from sticking hopelessly to the pan.) Heat the pan until it’s screaming hot. Now, using tongs, add chicken breasts, likely only 2 or 3 will fit at once. Sear chicken breasts (each side) until beautifully browned, then cook thoroughly until no longer pink. Around 10 minutes per breast. Cooking times may vary. Remember the internal temperature of properly cooked chicken is 160°. Set aside to cool slightly.

Assemble Sandwiches

Add condiments to bun sections and place one piece of grilled chicken on each bottom section of the buns. If chicken breasts are too large, slice to fit buns. Top each grilled chicken breast with cheese, lettuce, tomato slices, and 1-2 slices of cooked bacon. Add bun tops and cut sandwich diagonally before serving.

Condiments

You may use your choice of condiments to add flavor to your sandwiches. I mixed mayonnaise and pickle relish and slathered it on the buns before assembling the sandwiches.

Variations of this recipe:

Tuscan-style grilled chicken sandwiches with mozzarella cheese slices, a bit of fresh garlic, and roasted sweet peppers.

Chipotle grilled chicken sandwiches with a dash of chipotle chile powder and Monterey Jack cheese.

Jalapeno grilled chicken sandwiches with what else? Jalapeno peppers.

Try mint chocolate chip ice cream for dessert. Delicious!

True love never dies!

Clara, the lead character, holds true to her beliefs regardless of the trials life slings at her. And the love she carries in her heart for her childhood sweetheart, a man whose own life has proven difficult and embittering, remains strong in spite of distance and the passage of time. At the beginning of this story, Clara’s faith in God and love for Daniel endeared me to her. And so, I read on.

Daniel, the secondary character, is very much real in the way he allows the hardships of life to embitter him. Bitterness is never pretty, even in fiction. Daniel’s anger and determination to prove himself parallel the feelings and actions of fallible human nature. Daniel and Clara are alive with genuineness because often they aren’t very likable characters. I found Clara a bit much to take. Would a ‘lady’ of that era actually act with such brash self-assurance? I don’t think so! But then, none of us are perfect, and if I’m complaining about Clara’s personality, then the author did a good job writing this character. Clara got to me. She made me mad at times, and sometimes she made me cry. That is the mark of a well-written character!

Just a mild complaint though. I absolutely cannot get parts of the dialog out of my head! It did not ring true to the historical setting of the story. This book has the ‘feel’ of a Christian contemporary romance, yet it’s historically set. Of course, I’m a stickler for properly written dialog, manners, and conduct within the confines of a historically set story, so don’t mind my nitpicking.

One woman’s faith in God and her love for her childhood sweetheart prevail in the face of disillusionment and difficulty. That is why I continued reading this ‘historical’ story regardless of its contemporary spin. I so wanted Clara and Daniel to overcome their adversities. Did they? You’ll have to read the story to learn that for yourself.

Suffice it to say that, redemption through God is available for us all. The author aptly shows this through the lives of her characters. Clara and Daniel aren’t perfect, but I still hoped they would overcome their trails. If you like historical romance, this really isn’t a terrible read. Pick one up today, and enjoy Clara's and Daniel’s story.

Another Dawn by Kathryn Cushman drives home the point that our choices affect more than us alone. Grace Graham, the lead character, has made some imprudent choices in her past; namely running away from her problems. Now, with her sister insisting that she return home, Grace’s past choices rise up to haunt her. What Grace needs is a second chance. But does she return home humbly, hoping for a chance to show that she's changed, or is she still running?

Grace is quite a character! A character, I must admit, that I did not like at first. I thought her past choices revolved around her selfish and immature nature. After all, Grace runs away from trouble rather than stand up to it. But then, most people suffer from selfishness and immaturity in one form or another. And that’s one reason I believe this story reaches out and grabs readers by the collar. Grace is vulnerable to possible ridicule for her past choices, just as we all are. Grace is the sort of character that reminds one of past ‘bad’ choices and that hope abounds regardless of our past.

I was surprised to discover—after reading the back cover blurb−that this book leaned heavily on the issue of childhood immunization. Grace struggles with her choices involving this and her young son. Childhood immunization is a large part of the plot, but it disappointed me somewhat. My disappointment is not in the work. My children are past the immunization issues, so it really doesn’t interest me so much. I think this story would more suit a mother of young children.

This is a good read. The characters are well-crafted, and if not always likable, Grace’s realness strikes to the heart. And, I love the Tennessee setting.

This well-informed discourse logically spotlights Radical Islam and, not only America’s response to terrorism since 9/11, but also American’s international relations. While this is a weighty read, the subject matter is by no means difficult to comprehend.

At first, I was hesitant to pick up The Fight of Our Lives, due to its hard-hitting content. But once I delved in to The Fight of Our Lives, I found it hard to put it down.

The Fight of Our Lives is not a smear campaign, but an informative and well-cited work with a timely message. It’s worth reading. I highly recommend this book to all Americans. Read it. And then, ponder its contents.

What first captured my interest as I began reading Siri Mitchell’s, A Heart Most Worthy? The characters! The stars of this book are by no means flat. Each character had their own unique way of being. They leap off the pages and straight into the heart. I love that!

While I’m not a fan of first person fiction or of a large amount of interruptive ‘narration’, I stubbornly kept reading A Heart Most Worthy. I had to know how things turned out for each character. What we readers crave is an emotional experience. And Siri Mitchell grants this to the reader if by no other reason than her unique and wonderfully crafted characters. But wait! Siri’s historical detail is spot on. If you’re a bit of a stickler about the historical detail/setting in historical fiction, you needn’t fret about this book. Siri Mitchell’s grasp of historical detail sets a vivid backdrop for this story.

There is much to learn from the three Italian immigrant beauties, Julietta, Annamaria, and Luciana in this story. Their struggles and faith in God as they endure immigrant life in 1918 Boston inspires all Christians to keep the faith and hold on to their dreams. Will these ladies find what they most seek? Well, to learn that, you must read the book. And trust me; A Heart Most Worthy is well worth the read!

I enjoyed reading this story. It truly is inspirational. A great read on a Saturday night!

Emma makes me smile because she’s a gal that reminds me of myself. Had I been in her situation I might have chosen the same road. This story drives home the point that God’s plans are not ours and that we really should trust Him from the very beginning of our walk of faith. And it’s nice to revisit the characters from throughout the series in Finding Faith!

As I read this book, I suffered a sense of loss, not because I disliked the book but because I knew Finding Faith was the final book in the Pirates & Faith series. But with the series tucked safely away in my bookcase, I can read it over and over again! I certainly hope Molly writes another pirate series.

The only bad thing about this book is that once you begin it all the chores around the house will soon be forgotten. You won’t want to put this book down until you finish it! Now, is that really a bad thing?

And I have to admit, the cover of A Captain's Heart is my favorite cover of all the Pirates & Faith series. Just beautiful!

In addition, I purchased a beautiful boxed set, signed by Molly for my teenage daughter. I’m so glad I did. I sense Molly Evangeline will one day become well known for her Inspirational stories. I’m glad I met her. She’s a precious lady who truly loves the Lord.

When life seems impossible, it’s time to trust in God. Skylar McHenry certainly reminded me of that fact, as I read her story. I love Molly Evangeline’s characters and stories. Molly doesn’t just tell you the story; she gifts it to you in great throbbing detail.

If you’re a fan of Inspirational pirate fiction, don’t pass this book up. In fact, purchase the entire series and steal away for a Pirate & Faith weekend.

Credit Card Debt; the Borrower is Servant to the Lender

Are you tempted to purchase a few of the books I review via credit card? Don’t! Not unless you pay off your credit card on a monthly basis.

Biting off more than I could chew

Are you like me, taking on too many projects to complete in the warm season? I did just that last summer. I wrote a list of to-dos that ended up as didn’t-get-dones! I scarcely completed three-quarters of my 2010 summer project list. Of course, having 3 surgeries in 3 months hindered the process! Sigh…

I learned a valuable lesson last summer. It’s time to admit I cannot manage the amount of projects I once could. This ole gal just ain’t what she used to be. I’ll make much smaller summer project lists in future.

As I reviewed last year’s summer project list-in hopes of completing it this coming spring and summer-the unfinished items loomed like a great mountain before me. That list reminds me not to ‘bite off more than I can chew’ in the future. That list also brings to mind an issue that many more Christian Americans deal with than seem willing to admit—the looming mountain of credit card debt.

Many people bite off more than they can chew when they whip out their credit card(s) to pay for items, especially unnecessary items. In the past with good jobs and finances in fine order this might not have created a problem. Now, with the economy in crisis, many people cannot meet their credit card obligations.

As a Christian, I know I should look to God’s word on the matter of borrowing money. And when we use credit cards we are borrowing money. Paying for items with cash is wise. And wiser still is to live as debt free as possible. I’m not a wealthy author who can afford to say ‘live debt free’ without understanding the implication of that statement.

My family lives pretty much like everyone else, struggling to survive in this difficult economy. God is good, though. He always meets our needs. Still, I’ve learned through bitter experience that debt free living is the best way to live. And for goodness’ sake do not use credit cards to pay for anything, if you can manage to pay some other way. Perhaps you’re prosperous and able to pay your credit cards off monthly and feel offended by this post. Think on this: You never know what might occur in life to change those current good circumstances.

Be wise. Do not bite off more than you can chew by loading up on credit card debt. After all, who wants to enslave themselves to credit card companies? When we borrow, we become slaves to the lender. Debt is such a hard taskmaster!

If you are a Christian, faithful to God’s word and have more debt than you can easily pay off right now, don’t lose hope. God will never leave you or forsake you. Be obedient to God’s word and ask Him to grant you wisdom in dealing with your finances. Consider finding a trusted Christian counselor who offers counseling in the area of finances and debt management. God can and will open doors of opportunity for anyone willing to work hard to pay off outstanding debt. He has done this very thing for my family in the past, and I know He is able to work financial miracles for people, even in the midst of a depressed economy.

God is good. My prayer is that He will teach me His ways and that I’ll always be content whatever my circumstances.

To Seek and Save

If you enjoy a good suspense novel, To Seek and Save by Susan Mires and Gary Mathes won't disappoint. It kept me guessing 'who done it' until the end. Eric Hamilton, the lead character, is not only a man of God, but a man that goes beyond the call of God to protect those around him from a brutal killer. But what transpires at the end is a reminder that God loves us all, and that we all share in the call to share the message of the gospel with everyone, killers included. I loved this book! I highly recommend it. It’s a good read.

Susan Mires is a writer living in St. Joseph, MO. She holds a degree in agriculture with a journalism minor from Northwest Missouri State University. She worked as a newspaper reporter and editor for 12 years and now serves as the agriculture preparedness specialist for Mo-Kan Regional Council in addition to numerous freelance assignments.

Susan’s writing has appeared in Chicken Soup for the Soul, Missouri Baptist Pathway and other publications. After winning Ms. James’ novel, Love on Assignment, in a contest, I read it right away. It was a wonderful read. If you enjoy historical romance set in the Gilded Age, you’ll enjoy this book. This is the second book in the Ladies of Summerhill series. I like the characters Ms. James creates. They aren’t perfect. Each character is an individual with faults and strengths just as you or I. The characters change for the better as the story moves along. This book is a great read for the inspirational romance reader.
